I am a BIG fan of microwave rice, mostly because I can never quite cook it perfectly in a pan, and it's such a faff/I'm too lazy.
Grill as much halloumi as you wish (I could probably eat half a pack but that might not be so sensible or healthy!) then put together a salad of red onion, cucumber, cherry tomatoes, watercress, spinach and mint. Cook half the pack of brown rice (empty out half into a bowl, cover with cling film and cook for 1 minute) then add to the salad with the halloumi on top. I like a bit of yoghurt dressing on the side, just a few tablespoons of plain yoghurt, a couple of glugs of olive oil, a squeeze of lemon juice and sprinkle of salt.
This is a good one for a work lunch too as you can grill the halloumi at home the night before, put your salad in a lunchbox and microwave the other half of the rice at work. Basically add rice to any salad and it gets a lot more interesting and filling...otherwise I'd be going for the crisps 20 minutes later.
